Looks like they have split the white from the yolks, added food colouring (yes, colour I am not 'merican) to the whites and added the yolks to the mix in the pan.

It's a cake that has been carved at the top then iced. You can tell by the sloped icing just above the top design. My wife makes cakes so i know how its done by watching her from time to time.
