What the f*ck is “poutine”, you may be asking?
Basically, it’s a sacred Canadian dish made of french fries, cheese curds, and gravy. Seems pretty simple, but looks can be deceiving. True poutine connoisseurs will tell you that there is an art to creating the best poutine possible. The important factors are:
Thick-cut, double-fried Russet potatoes.
Fresh, not refrigerated, cheese curds that are soft and have a slight squeak to them when you take a bite.
Thick, brown gravy, made from either chicken or beef. The perfect consistency is one that is not too runny and not too thick.
